This salad has been on serious rotation over the summer. The light sweetness of the pineapple vinaigrette and refreshing pop of the blueberries makes it easy on the stomach when it is too warm for an appetite. In honor of the weekend I want to share an easy but delicious tomato sauce I use over pre-packaged Trader Joe’s portobella mushroom raviolis to bring a little bit of homemade to pre-made.
This meal is simple enough for a weeknight dinner but is tasty enough to serve to a group of friends for a weekend get together. Pair with a glass of Cabernet and a side salad and you have an entertainer-worthy meal. Shhh… I won’t tell anyone how easy it is! It will be our little secret.
In the Western European world, places like Italy and France get most of the cuisine glory. I can’t argue that it is undeserving, but while I studied in Madrid in college, I did try some pretty amazing Spanish food. Spain is mainly known for their way of eating- “Tapa Style”- but there are some hidden gems that I like to cook at home when my heart is longing for that Spanish flavor. Pair with a bottle of Rosé, some fresh Spanish cheese (Manchego and Iberico are two of my go-tos, but a new favorite is Campo de Montalban) and some luscious Castelvetrano olives (the best!! You can find them at most cheese shops or specialty food store) and you have an instant party!
I LOVE salads. I am not talking about a-lettuce-leaf-topped-with-a-few-carrots-no-croutons-and-dressing-on-the-side-salads. I am talking about salads filled with lots personality and unexpected flavors. Paired with crackers or a baguette, these salads are real meals in and of themselves (even for my 6’2″ husband!) or as a fantastic side to grilled meat.
